Fried Eggplant Patties

Ingredients

  • 2 cups Eggplant (used only half) grinder into smaller chunks
  • 1/4 cup Red onion
  • 1/4 cup Red Bell Pepper grinded
  • 1 cup Prepackaged Seasoned Chicken Pieces, chopped
  • 1 tbsp GOYA Adobo Seasoning
  • 1 /2 tbsp Garlic Powder
  • 1 tbsp Tony Caceres Creole Seasoning
  • 2 tsp Salt
  • 1 /2 cup Mozzarella Cheese shredded
  • 3 large Eggs
  • 3/4 cup Italian Breadcrumbs
  • Olive Oil or other for frying
  • Basil or Parsley, optional for garnish

Instructions

  1. In a food processor, pulse eggplant into smaller chunks or pieces. Remove from appliance. Using a cheesecloth, squeeze out any liquid.

  2. Next, add onion and red pepper into food processor and pulse into small pieces.

  3. In a medium or large bowl, combine eggplant, onion, pepper, spices, breadcrumbs, cheese, and eggs. Mix well to thoroughly combine.

  4. Roll into 6 to 8 medium sized patties and either refrigerate if preferred to allow patties to better set or fry immediately in a frying pan with oil of choice at medium high heat until lightly golden brown.
