Ingredients

  • 1 Box of Betty Crocker Yellow Cake Mix or your choice (reserve 1/2 cup for crisp topping)
  • 2 cans Sliced Peaches (reserve 1/2 cup liquid for cake batter)
  • 1 cup Horizon Organic Whole Milk or your choice
  • 2 large Eggs free range, organic
  • 2 tbsp Butter softened or melted
  • 1/2 cup Quaker Oats
  • 1/4 cup Light Brown Sugar
  • 1/2 cup Yellow Cake Mix
  • 6 tbsp Butter cold and cut into pieces

Instructions

  1. Separate 2-1/2 cups of cake mix into a mixing bowl.

  2. Add and blend together using a mixer, the cake mix, peach juice, butter and milk until creamy smooth.
  3. Add two room temperature eggs, one at a time, while continuing to mix.

  4. Pour cake batter into a greased or sprayed, floured 9x12 rectangular pan.

  5. Spread and lay the peach slices on top of cake batter (DO NOT MIX IN).

  6. In another bowl, combine the reserved cake mixture, sugar, and oats.

  7. Add cold cubed butter to the cake mix, sugar and oats. Using a pastry cutter, two forks, or your hands, pinch or work the butter into the ingredients to form coarse crumbs.

  8. Sprinkle on top of the cake and peaches.

  9. Bake in a preheated oven at 350 degrees for 40 minutes or until a toothpick comes out clean.
