In a bowl, mash the ripe avocados into very small chunks.
In a bowl, combine all the ingredients (avocados, sweetener, pistachio mix, cream, milk, vanilla and salt) together.
Remove and place in a chilled mixing bowl. Mix on low to medium speed to further smooth the avocados and thoroughly combine all of the ingredients.
Add to an ice cream container or bowl and chill for at least 6 to 8 hours before enjoying.
