Though I come from a large family, eight to be exact, lately it’s been pretty much somewhat of an empty nest over the past several years as life has brought about so many changes—both good and bad, happy and sad.
See due to a number of tragic events —I’ve had to learn how to adapt many of my recipes as it pertains to cooking for me and my household— from many to only a few and in most cases one or two. And this is where my Single Serve Large Carrot Cake Muffin comes in to play.
This tasty treat was made precisely one year ago (February 19, 2023), and I’m extremely sorry for this delay. Nevertheless I’m back on my food blog and my recipe sharing, so I wanted to share this spicy treat with you.
So whether you are single woman or a bachelor, I trust recipes like these will definitely help. Or if you too are facing an empty nest of sorts or a dwindling family presence, this gives you a chance to indulge in something sweet all by yourself. Plus, it’s easy to make and has a definite WOW factor in both taste and presentation. Enjoy! 😊
Large Single Serve Carrot Muffin with Cream Cheese Frosting
Spicy and super moist single serve carrot muffin with a delicious cream cheese topping.
Ingredients
- 4 tbsp Butter, melted
- 2 tbsp Light Brown Sugar
- 1 tbsp Sugar, granulated
- 1 large Egg
- 1 /2 tsp Vanilla Extract
- 4 tbsp Carrots, grated or shredded
- 4 heaping tbsp All Purpose Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 oz Cream Cheese, softened
- 2 tbsp Powdered Sugar more if needed to thicken
- Splash Vanilla Extract
- 1/2 tsp Cinnamon
Instructions

Preheat oven to 350 degrees.
For the cake muffin

In a bowl, whisk to combine the flour, baking powder, salt and cinnamon together.

In another bowl, mix and stir together the butter and sugar.

Then add in the whisked egg and vanilla.

Add the flour to the wet ingredients, and carefully mix by hand, until the batter is smooth and well combined. At this point, stir in the carrots.

Pour batter into a buttered dish and bake the muffin for 20 to 25 minutes or until a toothpick comes out clean or with minimal crumbs.

Allow the cake to cool for at leave 20 minutes before frosting.
For the cream cheese frosting

Mix the cream cheese, powdered sugar and vanilla together.

Frost the cool carrot muffin and next simply enjoy.
