It’s Sunday, and usually this is my opportunity to create , bake and make up some type of delectable dessert or sweet treat for my family—my faithful and loyal taste testers.
Let me begin by first saying their reviews of my food or baked goods is not met with bias or prejudice but rather with their honest opinions—be it rave reviews or curt criticisms. This includes thoughtful suggestions on either what or how I could improve it or a green light to go ahead. However, usually before my recipe makes it to them, I’ve already tested, tried and judged the recipe myself and made what I believe to be any necessary changes.
So here is a very basic ice cream recipe that is not only super healthy but super delicious! This is my Creamy Pistachio Avocado Ice Cream. It’s creamy because of heart healthy ripened avocados that I’ve lightly sweetened but not with refined sugar but rather a sugar free substitute and of course there’s the pistachio mix, and course it needs the richness of cream and a little milk after all it is ice cream.
So it’s the combination of a few simple ingredients that makes this green sugar free ice cream uniquely scrumptious.

Creamy Pistachio Avocado Sugar Free Ice Cream
The Creaminess of the avocados and the nutty flavor of green pistachios make this ice cream recipe a dessert dream!
Ingredients
- 3 ripe Avocados
- 1/2 cup Swerve Confectioners Sweetener
- 3.4 oz Pistachio Mix Use the entire package
- 1 cup Heavy Cream cold
- 1/2 cup Whole Milk cold
- Splash of Vanilla Extract
- Pinch of Salt
Instructions

In a bowl, mash the ripe avocados into very small chunks.

In a bowl, combine all the ingredients (avocados, sweetener, pistachio mix, cream, milk, vanilla and salt) together.

Remove and place in a chilled mixing bowl. Mix on low to medium speed to further smooth the avocados and thoroughly combine all of the ingredients.

Add to an ice cream container or bowl and chill for at least 6 to 8 hours before enjoying.
