Salmon is one of my favorite seafood eats, so usually I make a special point of making it at least weekly in order to enjoy not only a variety of tastes and ways it can be prepared but to experience its many health benefits as well, as salmon is rich in omega oils and vitamins .
So for this reason, as a chef and foodie, I am always in search of new and exciting ways to prepare it and create tasty recipes myself surrounding this particular fish food. With that being said here is a simple recipe for you to enjoy!
SALMON AND HERB PUMPERNICKEL CROSTINI
Salmon and Herb Crostini
Chunky Salmon with delicious herbs such as dill, culantro (or cilantro) and oregano served a top a toasted crostini.
Ingredients
- 15 ounce can Salmon
- 1/4 cup Sour Cream (or Creme Fraiche
- 1 cup Fresh Dill chopped
- 2 sprigs Culantro (or Cilantro) chopped
- 1/2 teaspoon Fresh Oregano chopped
- 1 tablespoon or Juice from half a lime
- Salt and Pepper, to taste
- Pumpernickel Bread toasted
- Splash of Sriracha sauce optional for a little heat
Instructions

Combine all of the above ingredients together in a bowl. Refrigerate if desired before serving on toasted crostini.

For the Crostini: Sprinkle pumpernicke bread or your choice with drizzle of olive oil and toast for 8-10 minutes.
