Here’s another cauliflower recipe with a Mexican flavor and cut and served as steaks. This is a simple side dish that pairs well with any protein of choice. This is perhaps as noticed from prior posts, the primary way I enjoy sprucing up this fairly bland but super healthy veggie.
RECIPE
Roasted Queso Cauliflower Steaks
The Mexican flavors of queso and other spices take cauliflower to another level.
Ingredients
- 1 Head of Cauliflower
- 1 tbsp Salt
- 1 /2 tbsp White Pepper
- 1 tbsp Goya Adobo Seasoning
- 1 tbsp Tony Caceres Creole Seasoning
- 1 cup Primal Kitchen Queso Dip
- 1-1/2 cups Ole Quesadilla Mexican Melting Cheese
- Olive Oil for drizzling
Instructions

Cut up clean cauliflower in 4 to 5 steak pieces vertically, after first slicing off the round ends.

Season cauliflower with adobo, creole seasoning, salt and pepper.

In a baking dish, cover cauliflower steaks with the queso sauce and let sit and marinate for 30 minutes.

Preheat oven at 450 degrees.

Drizzle cauliflower all over with olive oil.

Roast cauliflower for 20 minutes. The last 5 minutes cover the quesadilla cheese.
