This is a deliciously spicy buffalo chicken mixture that can be served up on a flour tortilla or as a dip with celery stalks or veggie pieces of choice or your favorite tortilla chips. Also, its savory enough to serve on top of shredded, hearty romaine lettuce as a salad with a dollop of sour cream with a squeeze of lime or lemon juice.
Though any buffalo sauce will do, I used one of my favorite places to buy all of my condiments, that is, Primal Kitchen Foods, as their products are organic, their ingredients wholesome, and not to mention their products taste absolutely delicious. Furthermore, this buffalo chicken and cheese dump recipe is quick and super simple to throw together, plus it’s ready in around 30 minutes.
Anyway, I decided to purchase a Mojo Rotisserie Chicken from the local grocer’s market rather than roast or bake my own, only to later have to shred it into pieces, which would amount to more time. Remember we can and should make every conscious effort to make our lives easier while working in the kitchen. We don’t have to do it all.
So, along with the chicken, I combined all of the ingredients usually associated with making Buffalo Chicken, such as Bleu cheese dressing or crumbles, cream cheese or sour cream, which is typically used in many dips and casseroles, cheddar cheese as well as a few others, chives and/or scallions for garnishing.
I enjoyed this recipe today both on a tortilla wrap as well as a dip with celery sticks (pictured below). It can also be spread between two slices of toasted bread for a spicy and flavorful sandwich or baked over precooked noodles for a Buffalo chicken casserole. You get to run with this recipe and decide, as there is no right or wrong way to eat and enjoy this. You can’t mess this up if you tried. So, get to cooking!

Cheesy and Creamy Buffalo Chicken Recipe
Cheesy and Creamy Spicy Buffalo Chicken mixture that can be served up as a dip, on a tortilla, or on top of noodles for a hearty casserole dish.
Ingredients
- 1 whole Rotisserie Chicken, shredded I bought Mojo flavored.
- 1 8 oz Cream Cheese cut into cubed pieces.
- 1 cup Cheddar Cheese shredded
- 1 cup Parmesan Cheese shredded
- 1 cup Monterrey Jack Cheese shredded
- 1/4 cup Bleu Cheese Crumbles or dressing.
- 2 cups Primal Kitchen Buffalo Sauce or your choice
- Salt and Pepper, optional and to taste
- 2 tbsp Chopped chives or scallions to garnish
Instructions

Preheat oven to 350 degrees.

In a large bowl, combine the chicken, cheeses, and buffalo sauce.

Place the mixture into a baking or small casserole dish. Sprinkle with more cheddar, parmesan and bleu cheese crumbles. Squeeze more buffalo sauce over the top of the chicken and cheese mixture, if desired.

Bake at 350 degrees for 20 minutes or until cheese is melty and bubbly.

Enjoy on a tortilla, as a dip with veggies, or bake over cooked noodles if planning to serve as a casserole.
