I recently got treated to a home cooked meal by my brother, and though this is not unusual because he also enjoys cheffing, I wanted to share this unusual but tasty dish and recipe that I assisted with, but only in terms of advising—these Fried Eggplant, Chicken and Cheese Patties.
RECIPE
Fried Eggplant Patties
Ingredients
- 2 cups Eggplant (used only half) grinder into smaller chunks
- 1/4 cup Red onion
- 1/4 cup Red Bell Pepper grinded
- 1 cup Prepackaged Seasoned Chicken Pieces, chopped
- 1 tbsp GOYA Adobo Seasoning
- 1 /2 tbsp Garlic Powder
- 1 tbsp Tony Caceres Creole Seasoning
- 2 tsp Salt
- 1 /2 cup Mozzarella Cheese shredded
- 3 large Eggs
- 3/4 cup Italian Breadcrumbs
- Olive Oil or other for frying
- Basil or Parsley, optional for garnish
Instructions

In a food processor, pulse eggplant into smaller chunks or pieces. Remove from appliance. Using a cheesecloth, squeeze out any liquid.

Next, add onion and red pepper into food processor and pulse into small pieces.

In a medium or large bowl, combine eggplant, onion, pepper, spices, breadcrumbs, cheese, and eggs. Mix well to thoroughly combine.

Roll into 6 to 8 medium sized patties and either refrigerate if preferred to allow patties to better set or fry immediately in a frying pan with oil of choice at medium high heat until lightly golden brown.
