Why the strange title you may be wondering? Well, let me tell you about how this title and story unfolded.
A few weeks ago when preparing a special meatloaf last minute for a weekday dinner and therefore being in haste, I’m sure you can guess what happened. It’s one of the worst nightmares for a chef, novice or seasoned, and that’s to leave out an essential ingredient—and so yes I left out the eggs or any type of binder in the meatloaf.
While I’m not the most comfortable confessing my error, I’m also not embarrassed to share my experiences in the kitchen and show that we all make mistakes and I dare to say especially in the kitchen.
I do believe however this type of accidental omission to be rare though when we are reading and following recipes that are right before our very eyes.
However, while creating this seasoned, delicious and savory meatloaf recipe, I am beyond thrilled to say that I didn’t forget the eggs or any other ingredients that would help bind and keep this meat all together as well as moist—my Spicy Olive Stuffed Meatloaf.

RECIPE
Spicy Seasoned Olive Meatloaf
Savory and spicy olives nestled in this seasoned and flavorful meatloaf. This tasty meatloaf will become a new favorite.
Ingredients
- 1 pound Ground Beef grass fed. NOTE: The meatloaf will naturally shrink a bit when using grass fed.
- 1 tbsp or packet Sazon Goya Con Azafran Seasoning
- 1 tsp Onion Powder
- 1 tsp Adobo seasoning spice
- 1 tsp Smoked Paprika
- 1 tsp Salt
- 1 tsp Black Pepper
- 3 Garlic Cloves grated
- 1/4 cup White Onions diced
- 1/4 cup Bread Crumbs
- 1/4 cup Grated Parmesan Romano Cheese
- 2 Eggs large
- 1 cup Manzanilla Olives sliced
- 1/2 cup Primal Kitchen Spicy Ketchup or other
- 1/8 cup Beef Broth
- 1/4 cup Mozzarella Cheese shredded
- Cilantro for garnishing
Instructions

In a large bowl, add ground beef and season with the 6 spices and seasonings.

Add the bread crumbs, Parmesan, eggs, and olives. Gently working by hand, work to combine and incorporate all of the ingredients together. Be careful not to overwork the meat, to avoid toughening.

Place and shape the meat into a loaf in a lightly sprayed nonstick or parchment lined meatloaf dish.

Top with ketchup and refrigerate until ready to bake.

Preheat oven to 350 degrees. Pour an 1/8 cup of beef broth over the entire meatloaf. Bake the meatloaf on top rack for 45 minutes depending on your oven.
