Beef Stew is the kind of meal that is the ideal food that is especially served up for those cold winter months. However, stew of any kind is usually so super flavorful and with its high and healthy veggie content, it’s one we tend to enjoy year round, and this Delicious and Healthy, Hearty Beef Stew recipe was purposefully kept super simple to accommodate my now keto and low carb lifestyle.

So Instead of using white potatoes, turnips are used in their place. Also, feel free to either make or buy your own sugar free tomato sauce or even one with no added sugar will suffice. Plus, you get to decide which vegetables you would prefer, but this is a delicious combination. Also, you can add more veggies to the mix.

Delicious Healthy and Hearty Beef Stew

Easy, delicious and healthy beef stew chocked full of onions, chunky carrots and turnips in place of white potatoes.

Ingredients

  • 1 pound Boneless Lean Stew Beef Round
  • Salt and Pepper, for seasoning of beef stew
  • 4 tbsp Olive Oil
  • 1 Medium White or Yellow Onion
  • 3 large Carrots, sliced into chunks
  • 4 medium Turnips, chopped
  • 1 packet Beef Stew Seasoning
  • 32 Oz Tomato Sauce of choice
  • 32 Oz Beef Broth, Low Sodium

Instructions

  1. Chop onion, carrots and turnip up and set aside.

  2. Season beef stew with salt and pepper and any other seasonings of your choosing.

  3. In a slow cooker or other pot, heat up oil. On medium high heat, partially brown the outside of the seasoned beef stew pieces. Remove from heat onto paper towels.

  4. In the same pan, add a tablespoon of oil and saute onions, carrots and turnips for 3 to 5 minutes until just slightly tender.

  5. Add the beef stew back into the pan with the veggies. Follow by adding in the beef stew seasoning pack, tomato sauce and beef broth.

  6. Cook on medium high heat for 20 minutes. Reduce the heat and slow cook for an additional 40 minutes or until beef is fork tender.
