Italian style caprese baguettes that are super flavorful and with plenty of crunch from the crispy garlicky bread.
Preheat oven at 400 degrees.
Add oil to a pan on the stovetop on medium low heat.
Add whole garlic cloves to the pan and allow them to sauté until the oil becomes fragrant and then immediately remove from stove eye. This should happen within a couple of minutes. Discard the garlic or used it for something else. Note: Take caution the temperature is not to high and pay close attention, so that the garlic does not burn.
Meanwhile, slice baguettes (keeping them fairly thick). Also, thinly slice the tomatoes and sprinkle with a little salt and pepper.
Baste the sliced baguettes with the seasoned garlic oil.
Next, smear with a tablespoon of marinara and add pepperoni slices (if using), a tomato slice and torn mozzarella pieces.
Spread baguettes out on a nonstick baking sheet and toast in the oven for 5 minutes or until cheese is melted and the bread is golden brown.
Top with fresh, torn basil and enjoy! Bon Appetit!
