If you enjoy roasted vegetables, then you will these roasted and charred cheesy Brussel sprouts.
My favorite way to enjoy most veggies is through roasting which amplifies their flavor. Charring also enhances and enriches the flavor despite the slightly dark cooked, colored leaves, it does not taste burnt.
So first I seasoned the brussel sprouts with poppyseed marinade. Allow it to refrigerate for a hour. Drizzle with olive oil, and sprinkle with salt and pepper and other spices.
Of course, you can add any additional spices of your choice. Then just leave it up to the high heat of the oven to do its job. However, be sure to monitor the brussels periodically especially with it roasting at such a high temperature despite its texture and being a thick vegetable.

Roasted and Charred Cheesy Brussel Sprouts
Flavorful roasted and charred brussel sprouts topped with melty mozzarella cheese.
Ingredients
- 1 pound Brussel Sprouts
- 1 tbsp Olive Oil
- 2 tbsp Primal Kitchen Poppyseed Marinade
- 1/2 cup Mozzarella Cheese shredded
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Adobo Seasoning Spice
- 1 tsp Creole Seasoning

Prep the sprouts by removing any rough tip at the one edge. Allow the sprouts to marinade in a large zip top bag for 30 minutes to 1 hour.

Preheat oven to 500 degrees.

Drizzle the sprouts with olive oil, gently stirring them to coat.

Sprinkle with salt, pepper, red pepper flakes, adobo and creole seasonings. Gently toss well to coat and cover the marinated brussels with the seasonings and spices.

Place sprouts into a nonstick sheet pan. Roast for 20 minutes, paying close attention periodically to the veggie while it is roasting at such a high temperature.

After 20 minutes, reduce temperature to 400 degrees. Temporarily remove brussel sprouts from oven and top with cheese. Place back into the oven for an additional 3-5 minutes allowing the cheese to melt.
