Peach Cobbler and Fried Dumpling Butter Cream Cake

Who doesn’t love the delicious old-fashioned taste of warm peach cobbler with those chewy and very tasty dumplings? I know that I do. The combination of a crispy flakey and buttery crust atop of sweet and tasty peaches that have been seasoned with warm spices such as cinnamon and nutmeg. And what of those chewy dough pieces, that I know I could never get enough of. Well, introducing my amazing “Peach Cobbler and Fried Dumpling Buttercream Cake” and here is just a little bit more about this moderately simple recipe below.

This Peach Cobbler and Fried Dumpling Cake tastes just like a warm peach cobbler hot out of the oven, minus the flaky and sugary crust but topped with a smooth and sweetened peach flavored buttercream. This yummy yellow cake is slightly dense and moist and consist of several different textures and bites–from the soft sweet peaches to the warm and spicy chewy doughy pieces hidden inside of this baked cake which requires a slightly longer baking time as a result.

Believe me when I say that the taste testers raved about this unique cake, and I’m confident you will too. Though there are quite a few steps before enjoying chowing down on this old-fashioned peach cobbler treat but in cake form, you’ll realize it was definitely worth the time and the wait! Peach Cobbler and Fried Dumpling Buttercream Cake

Old fashioned taste of peach cobbler with sweet peaches and fried dumplings inside of a yellow cake topped with peach flavored buttercream.

Ingredients

  • 1 box Yellow Cake Mix
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp. Nutmeg
  • Pinch of Salt
  • 1 cup Water
  • 1/2 cup Avocado Oil (or your choice)
  • 1/2 cup Peach Juice (reserved from can)
  • 3 room temperature Eggs
  • 1 tsp Vanilla Extract
  • 1 24 or 32 oz can Sliced Peaches (cut in smaller bite sized pieces) Reserve the juice for adding to cake batter and the buttercream as well as a few of the peaches for decorating the top of the cake.

For the Dumplings

  • 1 cup Ready-made Dough (or make your own if preferred) torn into small pieces to make dumplings
  • 1 tbsp Allulose Sweetener (or sugar) to sweeten dumpling dough
  • 1/2 tsp Cinnamon to spice up dumpling dough
  • 1/2 tsp Nutmeg to spice up dumpling dough
  • t tbsp Butter for lightly cooking and browning dough
  • Ready-Made Buttercream (or make your own or recipe below) Add 3 tablespoons of reserved peach juice to buttercream to flavor (optional)

For the Buttercream

  • 2 cups Swerve Confectioners
  • 2 sticks Butter, softened
  • 3 tbsp Reserved Peach Juice add more if needed if buttercream is to thick.
  • 1 tsp Vanilla Extract
  • Pinch of Salt (optional)

Instructions

  1. Whisk together yellow cake mix, baking powder salt, cinnamon, and nutmeg.

  2. Add to the dry ingredients, the water, oil, peach juice, eggs, vanilla and mix together in the bowl of a mixer.

  3. Pour and stir in the chopped peaches into the cake batter. Set aside while you prepare the fried dumplings.

For the fried dumplings

  1. Cut 1/2 of a ready-made dough sheet in half. Tear dough into small pieces until it measures about a cup. Sprinkle with and coat the dough pieces with the sugar, cinnamon and nutmeg. Note: Freeze or reserve dough for another use.

  2. Melt butter into a medium sized frying pan.

  3. Cook and lightly brown the dough, then immediately remove from heat. Allow the dough to cool before adding it into the cake batter.

  4. Pour the cake batter into 2- 6 inch buttered (greased) and floured cake pans

  5. In a preheated oven at 350 degrees, bake cake for 45 minutes or until a toothpick comes out clean.

  6. Allow cakes to cool before frosting with buttercream. Decorate frosted cake with peach slices (or to your liking).

For home-made Buttercream

  1. In the bowl of a mixer, add softened butter, confectioner's sweetener, peach juice, and vanilla. Blend until creamy and smooth.
