Easy to make and delicious to the taste is what these oat cinnamon buns are. See as I stated in previous posts, I was so very insecure about my own baking skills, but over recent years and with time, patience, and practice in my test kitchen, making yummy cookies, sweet and savory pastries, simple and luscious pies of all kinds, right up to cakes simple and elevated, as well as all of the rest out there in the dessert world, I can say that this up-and-coming pastry chef has definitely upped her baking and cooking game. See I now believe that I have the goods, and it’s really just as simple as that—having FAITH and CONFIDENCE in myself, and plus, I encourage you, whether aspiring pastry chef or everyday baker, to do the same. Delicious Oat Cinnamon Buns

Fresh and home-made, delicious oat cinnamon buns!

Ingredients

  • 1 package Active Dry Yeast
  • 1 cup Warm Water
  • 2 cups All Purpose Flour unbleached
  • 3 tbsp Sugar granulated
  • 1/2 tsp Salt
  • 1 Egg
  • 1/2 tsp Vanilla
  • 2 tbsp Unsalted Butter melted
  • 1 cup Dark Brown Sugar
  • 1 tsp Cinnamon
  • pinch Salt
  • 1 stick Unsalted Butter softened
  • 1 cup Oats Instant not recommended
  • 1 cup Powdered Sugar
  • 1/8 cup Whole Milk more if needed

Instructions

  1. In a measuring cup, combine yeast and warm water and add the sugar. Allow to sit for 5 minutes.

  2. In a food processor or mixing bowl, mix or whisk together the flour and salt to combine.

  3. Add bloomed yeast mixture to the flour and pulse until just combined and sticky dough comes together. 

  4. Next add one egg, vanilla and the cooled, melted butter. Pulse or mix again to fully incorporate just until it comes together, pulling away from sides of the bowl.

  5. Flour surface or board. Knead and roll out the dough into a ball. Place back into the bowl and cover to allow the dough to rise for one and half hours in a warm dry place.

  6. After allowing dough to rise, lightly flour surface and roll out into a large 9x12 rectangle.   

  7. Meanwhile, combine the sugar, cinnamon, oats, salt and softened butter together. Set aside.

  8. Spread the rolled dough with the sugar and nut filling. Cut in strips and roll up and place in a buttered and/or parchment lined dish with cut side down. Cover and let rise for another 45 before baking.

  9. For the Glaze: Combine the powdered sugar with the milk for a deliciously sweet topping. **Note: For a thicker glaze use less milk, and if the glaze appears to thick, just add more milk.

  10. Bake at 350 degrees for 15-20 minutes. Drizzle with melted glaze while hot.

Recipe Notes

In this particular recipe, I used oats (not instant). However, this recipe can also be made by using the traditional ingredient of pecans, or even walnuts, dried fruit or whatever suits your fancy. Just be creative!

Also, keep in mind that the rising and resting time for the dough totals around 135 minutes  or 2 hours and 15 minutes.
