For those of you who crave your morning caffeine or coffee fix along with a Danish, donut or sweet treat on the side — this coffee inside of a Coffee Streusel Mug Cake will do just the trick in accomplishing both. However, the coffee in this recipe can be omitted, if preferred, and the cake will still be equally delicious without the java.
It is a relatively simple recipe to make for this single serving mug coffee cake which bakes inside of a large coffee mug of course, in just minutes. The batter is best prepared outside of the mug and in two separate mixing bowls–one to combine the dry ingredients and the other the wet ingredients separately for a smooth and creamy cake batter consistency. This will help insure you get a lighter and still fluffy, but less dense cake texture when baked.
STEPS IN MAKING COFFEE IN A COFFEE STREUSEL MUG CAKE
Coffee in a Coffee Streusel Mug Cake

Ingredients
- 3 tbsp Oat Flour
- 3 tbsp Swerve Brown Sugar
- 1/2 tbsp Cinnamon
- 1 tbsp Folgers Coffee granules more or less to taste
- 1/4 tsp Baking powder
- Pinch of salt
- 1 Egg, regular
- 3 tbsp Milk of choice I used coconut here.
- 1/4 tsp Almond Extract Can be substituted with Vanilla extract.
- 2 tbsp Unsalted Butter, melted
For the Streusel
- 1 tbsp Oat Flour
- 1 tbsp Swerve Brown Sugar
- 1/2 tsp Cinnamon
- 1/2 tsp Folgers Coffee Granules
- 2 tbsp Unsalted Butter cold and cubed
Instructions

In a small mixing bowl, combine flour the dry ingredients,

In another bowl, whisk the egg.

Add in the milk, cooled melted butter and almond extract.

Combine the dry ingredients with the wet ingredients until a smooth cake batter forms.

Pour the batter into a buttered or lightly sprayed large coffee mug.

Top with only half of the streusel mixture, saving the rest for later, as the weight of the streusel will cause it to submerge into the batter while baking.

Place the mug on to a saucer as the cake will rise, and this will catch any batter that may overflow during the cooking process.

Microwave the mug cake for 1-1/2 minutes. Then top with the remaining streusel and microwave for an additional 30 seconds.

Eat straight out of the mug, or if preferred you can remove the mug cake and place it on a saucer to enjoy.
For the Streusel

In a bowl, gently combine with your hands the flour, sugar, cinnamon, coffee together with the cold, cubed butter until large and coarse crumbs form.

Top half of the streusel over the uncooked mug cake before microwaving. ,

Add the remaining crumb mixture over the cooked cake for the last 30 seconds of baking. Allow the cake to cool and set for about 3 minutes, before enjoying warm and right from the mug.
Recipe Notes
Note: For an even stronger coffee taste, you can also choose to a brew a cup of coffee and add a few tablespoons to the wet ingredients rather than adding crystals within the flour mixture. However, why even make the coffee when this recipe is intended as a shortcut. 😉
